Yeast is single celled fungi.  Popular and edible forms of fungi include edible mushrooms, bakers yeast, alcohol yeast, and blue cheese. Yeast cells are egg shaped and microscopic. It takes about twenty billion cells to create one gram of cake yeast.  Yeast can have many different names. Some common names are Saccharomyces cerevisiar, Saccharomyces and Brettanomyces. These yeasts are commonly used for bread and different types of beer fermentation.

yeast-chiller-front-page-03Yeast cells digest food to obtain energy for multiplying.  Sugar is the main food that yeast thrive one. Sugar can come in various forms such as cane sugar (sucrose), fruit juice (fructose), honey (glucose) or starch in flour (maltose). In the fermentation process, be it alcoholic beverages or bread making, carbon dioxide and ethyl alcohol is produced. These results are released by the yeast cells into the surrounding area. As the result of expanding gas the area will grow. The release of ethyl is what gives bread and beverages its flavor.

Fermentation occurs naturally in our environment. Many fruits that fall on the ground from a tree can ferment without us knowing. Because the fruit is full of sugar and overripe natural yeast organism can become lodged in the surface of the fruit. Thus, this creates fermented fruit on the ground. Yeast is one of the oldest know organisms. It has been adapted and evolved for man’s use in production and manufacturing.
