Mead Yeast

Almost any type of yeast can be used in mead except baking yeast. Deciding what yeast to use in mead is critical for a meads flavor profile and recipe. Knowing what yeast strain, brand of manufacturing yeast, along with its characteristics of yeast is important. The dryness or wetness of a mead is influenced by the ratio of honey to water and the type of yeast used. The type of yeast used also determines how long a mead needs to be aged.yeast-chiller-mead Yeast can exist in three forms and they are dried, liquid or powdered with a starter. Dry yeast is very common and the least expensive. In homebrew startups, dry yeast come in small packets and is dried. It will need to be refrigerated until they are ready to use. They will also need to be rehydrated in warm water before adding to them to the must. Liquid yeast can be more expensive and comes in liquid packets. It is already hydrated and read to be used instantly with the must.  It cannot be freeze, but refrigerated until it is used. Liquid yeast is grown on a gelatin surface that contains nutrients for it to survive. Powdered yeast that is packaged with starter is the last type of yeas. This yeast is packaged in powdered or liquid form and placed inside a sealed packager contain a starter. A starter is usually made from barley malt. In order, to use the inner package is punctured so the two components can meet and thrive. From here the yeast can multiply and added to the must. yeast-chiller-mead Yeast can create different profiles in mead either a sweet mead, or dry mead.  Sweet mead yeast is less alcohol tolerant. As it converts the sugar to alcohol it will die off around 5-8% alcohol. If any sugar is left over it will become a sweet mead. A dry mead can be produced with sweet mead by using less honey. Dry mead is more alcohol tolerant and can go to 10%- 15% before the yeast dies. Depending on the flavor profile and desired mead different meads will be used. yeast-mead
